Summer Fun in Winter

Welcome to my blog 3 Obessions, I just wanted to let some of you know that I am an Aussie, it is still Winter here in the land down under and the thought of doing this Summer Blog Hop was very inspiring to me as I really hate being cold. This year Winter has seemed longer and colder than normal....two things keep me going though....the thought that Summer is just around the corner and all the Summer Layouts I have been scraping that make me think of warm sunshiney days.

Here are a few Summer things by Me ..... Tracey Campbell

A new layout that I want to share with you that I created just for this Scrap That Baby Blog Hop is Our Little Ray of Sunshine - Miss Bronte - who loves paddling and playing in the water.


One of my favourite Summer Recipes is Pina Colada Tart. It is so simple and easy to make and taste divine!!

1 cooked tart shell
¼ cup of sugar
¼ cup of corn flour/starch
1 cup of coconut cream (not milk)
1 cup of milk
2 egg yolks
1 table spoon butter
1 table spoon dark rum
1 can sliced pineapple (drained)
¼ cup of apricot jam
1 table spoon dark rum
2 table spoons toasted coconut
1. Buy premade store tart shell.
2. In a saucepan, mix sugar and corn flour/starch. Then mix cream of coconut, milk and egg yolks in a small bowl and gradually stir into sugar mixture. Cook over medium heat, stirring constantly, until mixture thickens until it boils. Stir for 1 minute more and then remove from heat. Beat in butter and 2 tablespoons rum (more tastes nice too) with a wire whisk. Cool at room temperature for about an hour.
3. Pour cooled pie filling into tart shell. Arrange pineapple slices in decorative pattern over filling.
4. In small microwavable bowl, microwave jam uncovered on high for 20 seconds. Stir in 1 tablespoon rum and mix well. Brush glaze over pineapple. Sprinkle with toasted coconut. Refrigerate until serving.
A Little Bit Of Fun....
I have just started making my own fimo (polymere clay) hat pins to use as cute embellishments on my pages, just yesterday I made this cute sun. They are so easy to make I'll share the step by step with you.

1. Make a small ball, make a small snake and flatten, wrap the flat snake around the ball.
2. Squish the ball and the flat snake down to form a disc.
3. Roll out another snake and cut into small pieces.
4. Flatten then (thicker on one end than the other).
5. Attack to the disc shape and then decorate with a face and pop a pin into the back of it. Then bake.

You will end up with this jolly fellow.
No I just have to find some time to use him on a layout.

Whilst looking thought my computer for some Summer Ideas for this Blog Hop I learnt something new about myself - I like making the paper cutout of the sun. I didn't realise that I have used it so much in my scrapbooking. I felt I just had to share them all with you....as they are so much fun to create and to also bring a little bit of sunshine to your day. Hope you like them as much as I do!
